The Easiest (and Tastiest) Bean Dip Ever
May 7th, 2007 by ToniMy friend J came over recently and we served this dip. She liked it so much she asked for the recipe…. as almost everyone does. And what kind of friend would I be if I kept such a yummy treat to myself. Enjoy!
The Simple Family’s Version of Mrs Delap’s Famous Bean Dip
Serves 12
1 (15.5 oz) can refried black beans
1 (8 oz) package cream cheese
1 cup sour cream
1 (4oz) can diced green chilis (I have been known to substitute a chunky salsa here instead)
2 cups cheddar shredded (fancy shredded cheese will melt faster though it doesn’t make any difference in taste.)
2 teaspoons instant minced onions
1 (large) bag Frito’s corn chips (or tortilla chips or potato chips… it doesn’t seem to matter)
Place all ingredients except the chips in a small crockpot. Allow to heat, stirring occasionally until thoroughly blended. Serve hot right from the crockpot. NOTE: May also be used as a filling for burritos, or a topping for tostadas.
If you are in a hurry you can put the crock in the microwave for 5 min or so to jump start the process.
Mrs Delap’s Famous Bean Dip (original recipe)
Serves 12
1 (15.5 oz) can S&W Chili Beans in Zesty Sauce
1 (8 oz) package cream cheese
1 cup sour cream
1 (4oz) can diced green chilis
2 cups cheddar or jack cheese, shredded
2 teaspoons instant minced onions
1 (large) bag Frito’s corn chips
Place all ingredients in a blender, except for the Fritos, in the order listed. Mix until thoroughly blended. Pour into microwavable 2 quart dish and cook on HIGH for approximately 8 to 10 minutes, stirring every 2 minutes, until all the cheese is melted. Serve with corn chips. NOTE: May also be used as a filling for burritos, or a topping for tostadas.
